Seasonal Bitters Program:


Our seasonal bitters program is a way for us to utilize fresh and seasonal ingredients, creating a bitters flavor that suits the season and the style of drinks people usually imbibe in at that time of the year. These bitters will be generally released twice a year and in limited quantities only.

Nightshade - In the desert air, smoke will rise...


Our Nightshade chile chicory bitters are a bold and complex bitters, perfect for the fall and winter. Inspired by the desert and with nods to staple ingredients in Mexican cuisine, these bitters are a wonderful combination of spicy heat, light smokey notes and a rich and earthy backbone. As they progress, savor the flavors of several types of chiles, cinnamon, chicory and other dark botanicals and spices.


Spirits: These bitters are quite versatile and can add a little something extra to a variety of cocktails and spirits. They are obviously at home with agave based spirits but also play great with rye and dark rums.


Ideas: The simplest ways to start with these bitters are in a mezcal Manhattan or a rye Old Fashioned.


Tasting Notes: Aroma notes of earthy chiles, smoke, kola, cinnamon and chocolate.

The taste reinforces the aromas with added notes of spice, dark fruit and a nice bitter.

Elder Growth - From forest floor to towering top...


Our Elder Growth Conifer Berry bitters are a wonderful compliment to fall and on into the winter, using local harvested fresh Douglas Fir tips. These bitters start with a wonderful combination of dried berries, bringing notes of dark fruits, a subtle sweetness and an earthy note. From there, the flavor develops into the botanicals, bringing on notes of fresh douglas fir and eucalyptus, finishing with a lovely note of baking spices, especially nutmeg, as the forest lingers on to the very end.


Spirits: These bitters are very versatile and can work with nearly any spirit. Use them with gin to harmonize with the botanicals or with whiskey to have the berry notes blend perfectly and a add a little spice and botanical complexity. They also work great with sweet vermouth and are an interesting addition to tequila.


Ideas: The simplest ways to start with these bitters are in a Manhattan or a Fitzgerald.


Tasting Notes: Aroma notes of douglas fir, elderberry, eucalyptus, nutmeg and cinnamon.

Taste follows with big forest flavors, earthiness, berry sweetness, and a baking spices.
